Nut Free Energy Bites

I made these nut free energy bites for my friend who is allergic to nuts as she was always left out when my other friends were tasting my energy snacks. I would normally use sticky dried fruit and nuts but instead of nuts I used sunflower seeds. Sunflower seeds are rich in magnesium and selenium and give that nice crunch and texture.

Nut Free Energy Bites

Makes: 18 bites
Preparation time: 10 minutes

Ingredients

  • 1 cup dates
  • 1/2 cup soft prunes
  • 1/2 cup sunflower seeds
  • 1/2 cup oats
  • 1 tbps raw cacao powder
  • 1/2 tsp vanilla

Directions

  1. In a high speed food processor process dates until it forms a paste, add the prunes, vanilla essence, and mix until well combined.
  2. Add the remaining ingredients and process until it resembles a dough. Add some more water if itโ€™s too dry.
  3. Allow the dough to rest in the fridge for about 2 hours. Once rested roll out into 20 balls.
  4. Keep the bites in an airtight container in the fridge or kitchen cupboard. Eat within a couple of weeks.
