These are my favourite energy bites at the moment. They are sweet and chewy with intense mango flavour. Made out of only 4 ingredients! They are very easy to make and last for weeks.
- 1 cup dried mango
- 1/2 cup dates
- 1/2 cup rolled oats
- 1/2 cup shredded coconut
- Pit the dates and put them into a food processor with an S blade. Process until they form a dough kind of consistency. Add the remaining ingredients and process for another couple of minutes or until well incorporated.
- Remove from the food processor and roll out small bite-size balls.
- Store in airtight container. They will last up to a month.
