Coconut And Chocolate Chia Seeds Pudding

As you may have noticed, I love chia seeds pudding. I like to have it for my breakfast as it really gives me energy for the rest of the day and keeps my hunger at bay for hours.
If you have never heard of chia seeds, they are tiny black seeds similar to poppy seeds. They are best eaten soaked in water or any non-diary milk. Seeds are rich in complete protein, fats and carbohydrates. They also contain powerful antioxidants, iron and omega-3 fatty acids.
Chia seeds are easy to use and so versatile. You can use them as a binder in egg-free recipes to add a crunch, thicken smoothies or simply make a chia seeds pudding.
The beauty of this chia seeds pudding is the combination of chocolate and coconut flavours. It may look a bit complicated to make but trust me it is very simple. I like to make it ahead of time and then have it either for breakfast, as a dessert or afternoon snack. You can also freeze it into small portions and take it out when you fancy something crunchy and delicious.

Makes: 2 portions
Preparation time: 2 hours

Ingredients

  • 2 tbsp chia seeds
  • 1 cup almond milk
  • 1 tbsp cacao powder
  • 1 tbsp maple syrup
  • 1 cup coconut milk
  • 1 tbsp cacao powder
  • 1 tbsp shredded coconut
  • 1 tbsp maple syrup

Directions

  1. Prepare chia seeds puddings by mixing the ingredients for each pudding and allow to soak for a couple of hours in the fridge.
  2. To serve, add a couple of spoonfuls of each pudding on either side of the bowl and decorate with fresh fruit.
  3. I like using strawberries as they really go so well with the this combination of flavours.
