These breakfast energy balls are another great option for when you don’t have much time in the morning and want something quick and healthy to eat. I like making them all the time as they are really delicious and leave me bursting with energy. And They also serve as a great pre-workout meal as well.
Makes: around 15 balls
Preparation time: 15 minutes
- 1 cup dates
- 1 cup almonds
- ½ cup oats
- 1 tsp vanilla essence
- 1 tsp chia seeds
- Place dates in food processor with an S blade and pulse until form a paste like consistency.
- Add almonds, oats, chia seeds and vanilla essence, and pulse until it forms sticky dough.
- If the dough doesn’t stick together add a little bit of water and pulse again until the dough becomes stickier.
- Roll out 15 medium sized balls and store in an airtight food container.
